When loading more than one Instrument to the Rack, KONTAKT automatically assigns the next available MIDI channel to any additional Instrument. If you want to change this assignment, open the Midi Channel drop-down menu from the Instrument's Header and select the MIDI Port and Channel you want to use for this particular Instrument.
